Room temp (or warmed slightly in micro) 2 eggs 1/2 cup sugar 1 tsp vanilla Mix all together with mixer. Pour into a lined and greased 9" round bake 25 minutes at 350 cool and refrigerate for 6 hours Cake In a microwavable bowl mix: 1/2 cup brown sugar 3/4 cup cocoa Add 1/2 cup milk 1 yolk Add 1/2 cup marg . Micowave till it boils. Stirring every minute Cool to room temp by placing bowl in cool water Beat: 1/2 cup marg 2 yolks 1 cup sugar Mix 1 3/4 cup flour 1 tsp baking soda Mix 3/4 milk 1 tsp vanilla Add flour and milk alternating in 3rds to the butter, starting with the flour Add cooled chocolate Beat egg whites and fold in gentley Bake in two 9" rounds (greased and lined) at 350 for 40 mintes Buttercream icing I didn't use much of this but it keeps months in the freezer without losing its great taste In mixer bowl mix 6 yolks Bring to a full rolling boil 3/4 sugar 1/2 corn suryp Slowly add to the yolks while continuing beating When cool add 1 pound of butter about 2 Tbsp at a time beating all the time After its cool beat in 2 tsp vanilla. Chocolate fudge 2 cups sugar 3/4 cup milk Boil till 245 let cool a bit, till very warm but not dangerous Add 1 cup chocolate chips, 1/2 cup marg and 1 tsp vanilla Beat until cool Whipped Cream 8 oz 35% cream 2 Tbsp sugar 1 tsp vanilla Beat until thick until beaten enough to spread Rasberry sauce I small pkg frozen plain raspberries 1 cup sugar 1 1/2 Tbsp corn starch mix sugar and raspberries and melt in microvave strain out juice for 1/2 hour. Mix a little juice and the cornstarch. Add back to rest of juice Boil juice on microwave stirring often till thick. Stir in raspberries To assemble cake Start with cheese cake layer. Then cake, then fugde. Spread fugde so its a 1/2 inch or so. There will be leftovers. Another cake then make a ring of buttercream on the top of the cake near the edge. The ring should be about 3/4 inch thick and high. Pour in Raspberry sauce. Cover sides of cake with whipped cream. Yes its a lot of work LOL. I had the icing and cake part made from the week before. The cake was frozen and the icing keeps a while in the fridge. Just warm it to room temp before handling it. The fudge is best made right before assembling since it may harder too much to spread
