Buttercream Icing


Beat:
6 yolks

Bring to a full rolling boil:
3/4 cup (150 gr) sugar
1/2 cup (164 gr) corn syrup

Remove from heat. Slowly add to the yolks while continuing beating being careful not to pour hot syrup on beaters. If using stand mixer add 1/4 of syrup while mixer is off. Repeat with rest, beating well between each. Beat until room temp.

Beat in 1 oz at a time:
1 lbs butter

Beat in:
2 Tbs vanilla

For chocolate melt and add 2 dark chocolate bars and 2 milk chocolate bars.
