Cannelloni


Cook 4 minutes in microwave:
300 gr spinach

Tomato Sauce

Sauté:
1 large onion, diced
1 clove garlic

When the onion is soft mash the garlic.

Add:
1 28 oz can of diced tomatoes
1/2 Tbs Italian Spice
1 1/3 cups water

Bring to a boil and simmer 10 minutes.

Cream Sauce

Melt:
1 oz margarine

Add then cook till bubbly:
1/8 cup flour

Mix and microwave 1 min:
1 cup milk
1 scored bay leaf
pinch nutmeg

Whisk warmed milk into margarine flour mixture. Cook until boiled.

Filling

Mix:
500 gr cottage cheese
1 egg
3/4 cup parmesan cheese
75 gr grated mozzarella
1/4 cup cream sauce
1/8 tsp nutmeg
cooked spinach

To assemble put 1/3 of the tomato sauce in a 9x13" pan. Place filling in medium freezer bag. Cut a hole in a corner that is slightly smaller than an oven ready cannelloni. Fill 24 noodles. Place them on the tomato sauce in 3 rows of 8. Cover with remaining cream sauce and then cover with remaining tomato sauce.

Bake at 350º for 50 min.
