Crust:
Mix:
1 cup rolled oats
1/2 cup flour
1/3 cup brown sugar
1/3 cup melted butter
Pat into pie shell. Use foil to hold crumbs in place. Bake at 375ºF
for 15 min.
Filling:
Mix:
1/2 cup sugar
3 Tbs cornstarch
Add:
2 cup milk
2 eggs beaten
Microwave until thick and boiled stirring each minute
Add:
1/8 cup butter
3/4 cup coconut
1 Tbs vanilla
Cool and pour into pie shell
Topping:
Whip:
1 cup whipping cream
2 Tbs sugar
1/2 vanilla
Spread on filling.
Sprinkle with 1/4 cup toasted coconut
