Uses about 2 limes and 7 to 10 kiwis
Kiwi Lime Torte-Cake
Mix in large bowl:
3 1/3 cups flour
1 1/4 cup sugar
1 Tbs baking powder
2 tsp baking soda
1/2 tsp salt
Blend:
4 kiwis
1 3/4 cup milk
2 eggs
3 yolks
1/4 cup lime juice
Beat:
3 egg whites
1 1/4 cup sugar
Mix blended kiwi into flour just until mixed. Fold eggs into batter. Bake in three 9" round pans and three 8" round pans for 32 min at 350ºF.
Mix in large microwave bowl:
3/4 cup sugar
3/8 cup cornstarch
Then mix in:
3 3/4 cup milk
2 tsp grated lime zest
Heat until boiled and thick. Pour over cakes and decorate with 3 to 6 sliced kiwis.
