Like most of our cakes we serve at breakfast we make this with whole wheat flour. The cake freezes so well that it's a popular item when the kids eat left overs.
Lemon Dream Cake
Mix:
4 cup flour
2 1/4 cup sugar
1 Tbs baking powder
1/2 Tbs baking soda
Mix:
1 1/2 cups milk
1 Tbs vanilla
1 1/2 cups oil
3 eggs
1/2 cup lemon juice
grated zest of 3 lemons
Beat:
2 egg whites till stiff
Mix milk mixture into flour mixture then fold in egg whites. Line and grease three 9" round pans.
Bake at 350ºF for 30 min.
Mix in large glass bowl:
1 1/2 cups sugar
1/3 cup cornstarch
1/2 tsp salt
Add and mix:
2 yolk
2 cups water
3/8 cup lemon juice
grated zest of 1 lemon
Heat in microwave till boiled stirring every min.
Slice cake and serve with pudding.
