Margo's Perfect Chocolate Cake
Mix:
1/2 cup + 3 Tbs (63 gr) cocoa
1 cup boiling water
Cover with wrap and let cool to room temperature.
Lightly combine:
3 eggs
1/4 of cooled cocoa
2 1/4 tsp
Mix in a large bowl:
1 3/4 cup flour
2 1/2 Tbs cornstarch
1 1/2 cups sugar
1 Tbs baking powder
Add and mix on low until moistened:
8 oz margarine
remaining cocoa
Increase speed to medium and beat 1 1/2 min.
Add egg mixture in 3 batches, scraping sides and beating 20 sec each time.
Pour into greased, floured and lined 9" pans.
Bake at 350ºF for 30 min.
