Moist Rhubarb Coffee Cake


Mix in large bowl:
3 cups flour
1/2 Tbs baking powder
1/2 Tbs baking soda
3/4 teaspoon salt
1 cup sugar
1 cup brown sugar

Beat:
2 eggs

Add:
1 1/2 cup yogurt
3/4 cup oil
1/2 Tbsp vanilla

Stir egg mix into flour mixture just until ingredients are almost blended.

Stir in just until mixed.
4 1/2 cups chopped rhubarb

Spread into greased 9x13" glass pan. Sprinkle top evenly  3 Tbs brown sugar.

Bake 45 min at 350ºF
