This is more like a muffin than a dessert cake. I made up this recipe years ago when one of our kids had a wheat allergy. I started using flour after the allergy was gone because the cake was too crumbly without it. You need a way to grind up the oats. We like to serve it with Cream Cheese Icing.
Oatmeal Carrot Cake


Blend:
1/2 cup oil
3/4 cup molasses
4 eggs
1/4 milk
1 1/2 cups sugar

Grind:
2 cups oats

Mix:
2 cups flour
ground oats
1/2 tsp salt
1 tsp soda
1/4 tsp cloves
1 tsp ginger
1 tsp cinnamon
1/4 tsp nutmeg

Add and mix:
1/2 cup raisin
3 cups grated carrots

Mix in egg mixture. Pour into a greased 9x13".

Bake 50 min at 350ºF
