As a child my mother used to occasionally buy onion buns at the grocery store. I thought they were a treat. Over the years I've tried making my own without success. The onions on the outside would burn and taste awful or the soup mix I used gave the buns a nasty flavor. After making a garlic bread that used microwaved garlic in the dough I thought I'd try it with onions. Yum! The microwaved onion pieces don't get an awful burnt taste when placed on the outside. The egg dough tastes is perfect with the onions. These are probably much better than those grocery store buns but they bring back that treat taste perfectly.

Onion Buns

Onion BunsMicrowave till soft:
2 onions, chopped

Place in bread bowl:
1 cup warmed milk
1 Tbs yeast

Warm 3 beaten eggs for 30 seconds stirring every 10 in microwave. Then add to bowl.

Add:
4 1/3 cup flour
2 tsp salt
2 Tbsp sugar
3 eggs beaten and warmed
3 Tbs oil
half the onions

Knead and let rise 75 min. Shape into 12 rolls, flatten them and cover with left over onions. Rise about an hour. Bake 18 min at 375ºF

I always use traditional yeast but if you are using instant mix it with the flour. Yeast doesn't seem to mind disolving in the milk.
