During peach season Costco sells "I'm ripe" peaches. Margo helps me to boil the skins so I can peel the peaches. We end up tasting a slice from each peach. They are so good and at least two or three are absolutely wonderful. This crisp is so good that we all look forward to peach season. We even freeze enough slices to make one in the winter. It's good warm but even better at room temperature.
Peach Crisp


Peel and slice:
12 large peaches

Put peaches in 11x15 (largest glass pan).

Mix:
2 cups oatmeal
2 cups flour
1/4 tsp baking soda
1/4 tsp salt
2 cups packed brown sugar
8oz (1 cup) margarine

Cover peaches with mix. Bake 45 min at 350ºF

Better when cooled.
