Pie Dough

This uses lard. No it's not healthy but shortening is worse. Most things made with pie dough aren't healthy anyway so we eat it as a treat. Lard actually has less saturated fat than butter (and taste lol). This pie dough makes a very easy dough to work with. It's very flaky and tender too. It freezes very well. In Quebec we have good quality lard (white and boring lol) available everywhere. I've heard it's not always easy to find. If you can't find some use a recipe that is made for what you do have.


Mix:
6 cups flour
1 tsp salt
1 tsp baking powder
2 Tbs brown sugar

Add and mix with paddle or cut in until pea size:
1 lbs lard

Beat an egg in a 1 cup measure. Add 1 Tbs vinegar then fill to 7 ounces. Mix well. Dump into flour mixing just till it clings together. Remove from bowl and knead a few turns.

Makes a top and bottom for three 9" pies
