We don't eat this very often and it's not really a recipe but I have been asked how we make it. Funny the name doesn't turn anyone off in the slightest here. The potatoes should be called roasted but we know them this way.
Pork Roast and Greasy Potatoes


Place a pork loin roast in a 9x13" glass pan. The roast is one of those cheap ones you find on sale. It has to be fatty and have it's bones in or it just doesn't work. Cut a bunch of slits in it so you can put a bulbs worth of peeled garlic cloves in it. Roast the meat at 375ºF till it's internal temp is 170ºF. An hour before it's ready take the roast out of the pan and toss potatoes cut in 1.5" pieces in the drippings. Put the roast back and surround it with the potatoes. A 4 lbs roast takes about 90 min.
