Potato Cheese Soup


Sauté in a pot:
1 Tbs oil
1 large onion, diced
1 clove garlic

When the onion is soft mash the garlic.

Place in pot:
6 medium potatoes chopped and peeled
3 medium carrots chopped and peeled

Add enough water to just cover. Boil gently till potato is easy to pierce.

Add:
3 cups milk
1 tsp salt
1/4 tsp pepper

Blend soup till desired smoothness.

Add:
150 gr cheddar.

Heat soup to melt cheese.
